Ingredients (serves 2)

  • 2 cups kale, torn
  • 1 tsp smoked paprika
  • Zest of ½ orange
  • 1 tsp olive oil
  • Pinch of sea salt

Broccoli–Walnut Crumble

  • 1 small head broccoli, chopped
  • ¼ cup walnuts
  • 1 tsp lemon juice
  • Pinch of flaky salt

Red Cabbage Quick‑Pickle

  • 1 cup shredded red cabbage
  • 1 tbsp apple cider vinegar
  • ½ tsp maple syrup
  • Pinch of salt

Sweet Potato–Mustard Green Mash

  • 1 large sweet potato
  • 1 cup mustard greens, chopped
  • 1 tsp olive oil
  • Black pepper

Ginger‑Garlic Lentils

  • 1 cup cooked lentils
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • ½ tsp turmeric
  • Salt to taste

Beet‑Green Herb Oil

  • 1 cup beet greens
  • Handful fresh basil
  • 2 tbsp olive oil
  • Squeeze of lemon

🔥 Method

1. Make the red cabbage quick‑pickle

Mix cabbage, vinegar, maple syrup, and salt. Massage lightly. Set aside — it turns neon purple as it sits.

2. Roast the broccoli

Toss broccoli with a little oil and roast at 200°C for 15 minutes. Toast walnuts separately. Crush together with lemon juice and flaky salt.

3. Make the sweet potato–mustard green mash

Boil or steam sweet potato until soft. Mash with olive oil and black pepper. Fold in chopped mustard greens so they wilt into the heat.

4. Char the citrus kale

Heat a pan until very hot. Add kale, smoked paprika, orange zest, and salt. Flash‑char for 30–40 seconds until edges crisp.

5. Warm the ginger‑garlic lentils

Heat lentils with ginger, garlic, turmeric, and salt. Keep them soft and fragrant.

6. Blend the beet‑green herb oil

Blend beet greens, basil, olive oil, and lemon until bright green and glossy.

In a wide bowl:

  1. Spoon in the ginger‑garlic lentils.
  2. Add a generous scoop of sweet potato–mustard mash.
  3. Pile the charred citrus kale on one side.

  6. Finish with a drizzle of beet‑green herb oil.
