- 1 cup wholemeal flour (or oat flour)
- ½ cup unsweetened almond milk
- 2 tbsp olive oil or coconut oil
- 1 tsp baking powder
- Pinch of cinnamon & nutmeg
For the syrupy sauce:
- 3 tbsp maple syrup – Buy St Lawrence Maple Syrup
- 2 tbsp unsweetened almond butter
- Splash of lemon juice

- Prep the dates: Soak in hot water until soft, then mash into a paste.
- Mix the dry ingredients: Combine flour, baking powder, cinnamon, nutmeg, and walnuts in a bowl.
- Add the wet ingredients: Stir in almond milk, oil, and the mashed dates until you have a thick batter.
- Bake: Pour into a greased baking dish and bake at 180°C for 25–30 minutes, until firm and golden.
- Make the sauce: Warm maple syrup, almond butter, and lemon juice in a small pan until smooth and glossy.
